Will Skates!!!




















So as you know Will is an avid skater. He lives for skateboarding! So I thought I would share with you all how good he is getting. These are pics of him doing an ollie and grinding on a stop sign pole that was raised on one end. He skates with his buddy Zach and a few other kids at our apt. He's trying to work on his kickflip, 180 and nose grind. His favorite skater is Ryan Sheckler and Tony Hawk. Enjoy these pics!

Seattle Seahawks Game!





This weekend Will, Tony and I went over to Ed and Donna's for good food and football! Tony was able to show his Seattle pride and wear his jersey that his Grandpa Ken gave to him! He was so cute. Will got the chance to get out and skate with his friend Zach. We had a wonderful Fajitas Soup cooked by Donna, which was delicious(featured in the recipe box). Even though the Seahawks didn't pull it off we still had fun cheering for our team!

Latest Houma Live event!






Houma Live is an event where a band plays in the town center. The whole community comes together to listen to music and enjoy family, eats, and drinks. The band played older seventies and eighties music. This time Billy got to go with us and enjoy in the festivities! Even though we only hung out for about an hour we still had a blast! Here are some pics from that event. Unfortunately Will was running around so much that we never got a chance to take a complete family pic. One of these days it will happen. Ed, Donna and Zach went with us.

The Recipe Box...

The recipe box is full of recipes that we love and have tried. I would like to share our kitchen with yours! Hope you try and enjoy these cooking delights!

White Enchiladas

INGREDIENTS

* 1 (10.75 ounce) can condensed cream of chicken soup
* 1/2 cup sour cream
* 1 tablespoon margarine
* 1 onion, chopped
* 1 teaspoon chili powder
* 2 cups chopped cooked chicken breast
* 1 (4 ounce) can chopped green chile peppers, drained
* 8 (8 inch) flour tortillas
* 1 cup shredded Cheddar cheese

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl mix the soup and sour cream; set aside.
3. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken,
chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through.
4. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla.
Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.
5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

Tropical Pork chops

* 1/3 cup ketchup
* 2 tablespoons prepared mustard
* 2 tablespoons brown sugar
* 1 tablespoon cider vinegar
* 1 1/2 teaspoons soy sauce
* 1/8 teaspoon garlic salt
* 1/8 teaspoon onion salt
* dash cayenne pepper
* 4 boneless pork loin chops
* salt and pepper to taste
* 1/4 cup chopped onion
* 2 garlic cloves, minced
* 1 tablespoon vegetable oil
* 1/3 cup water
* 1/4 cup pineapple tidbits
* Hot cooked rice

DIRECTIONS

1. In a saucepan, combine the first eight ingredients. Cover and simmer until sugar is dissolved, about 10 minutes. Remove from the heat;
set aside. Season pork chops with salt and pepper. In a skillet, cook pork, onion and garlic in oil until meat is browned. Add water and reserved
sauce. Cover and cook over medium-low heat for 20-25 minutes or until the meat is no longer pink, adding more water if needed. Stir in
pineapple and heat through. Serve over rice

Sticky Chicken

2 large yellow onions chopped
6 cloves of garlic or 3 Tlb. spoons chopped garlic
2 Tbl. spoons of ovlive oil
1 package of 10-15 chicken drumets
1 package of 6-8 chicken wings
salt and pepper to taste
2 Tbl. spoons all purpose seasoning
1 tps. cayenne pepper if desired
1/2 C. Water


In a large boiling pot combine chopped onion, garlic and oil. Add salt pepper and all prupose season. Cook down on medium heat until onions are almost browning. Then sprinkle chicken with seasonings as desired. Put Chicken into pot and stir all together. Turn down heat to med-low. After 15 minutes add water. Now let simmer for two hours, stirring every 10-15 or so, or until chicken is falling off bone and there is a sticky goo in the bottom of the pot. You'll know it's done when you can't wait anymore to eat it.

You can put anything you want with this....stuffing, mashed potatoes or just by itself on game day. Hope you enjoy. We love this one!

Halloween costumes!





So this year the whole family got to enjoy in the festivities of dressing up. Tony was a pumpkin, Will was the character from Scream Movie and Billy and I were dressed up in old retro pin-up style. Billy and I had gone out the weekend before bar hopping in Houma. We ended up listening to a really good live band at the last bar. Will and Tony got to wear their costumes on Halloween. We went to a friends house. Tony passed out candy while Will went trick or treating. Both the kids had a blast!

Carving Pumpkins!










Will had a great time carving pumpkins this year. We didn't even buy one of those over priced kits. He made his face by drawing it on and then carved the pumpkin with a regular kitchen knife. I have to tell you at times it was a little scary to see Will in action with knife, but he managed well. I carved along side him with my own pumpkin. He had two great looking carved faces in as little as an hour! Can't wait until next year and we can do it all over again.
