The Recipe Box...

The recipe box is full of recipes that we love and have tried. I would like to share our kitchen with yours! Hope you try and enjoy these cooking delights!

White Enchiladas

INGREDIENTS

* 1 (10.75 ounce) can condensed cream of chicken soup
* 1/2 cup sour cream
* 1 tablespoon margarine
* 1 onion, chopped
* 1 teaspoon chili powder
* 2 cups chopped cooked chicken breast
* 1 (4 ounce) can chopped green chile peppers, drained
* 8 (8 inch) flour tortillas
* 1 cup shredded Cheddar cheese

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a small bowl mix the soup and sour cream; set aside.
3. Melt margarine in a medium saucepan over medium high heat. Add onion and chili powder, and saute until tender. Stir in the chicken,
chile peppers, and 2 tablespoons of the soup mixture. Cook and stir until heated through.
4. Spread 1/2 cup of the soup mixture in a 9x13 inch baking dish. Spoon about 1/4 cup of the chicken mixture down the center of each tortilla.
Roll up tortillas, and place, seam-side-down, in the baking dish. Spoon remaining soup mixture on top, and sprinkle with cheese.
5. Bake 25 minutes in the preheated oven, or until bubbly and lightly browned.

Tropical Pork chops

* 1/3 cup ketchup
* 2 tablespoons prepared mustard
* 2 tablespoons brown sugar
* 1 tablespoon cider vinegar
* 1 1/2 teaspoons soy sauce
* 1/8 teaspoon garlic salt
* 1/8 teaspoon onion salt
* dash cayenne pepper
* 4 boneless pork loin chops
* salt and pepper to taste
* 1/4 cup chopped onion
* 2 garlic cloves, minced
* 1 tablespoon vegetable oil
* 1/3 cup water
* 1/4 cup pineapple tidbits
* Hot cooked rice

DIRECTIONS

1. In a saucepan, combine the first eight ingredients. Cover and simmer until sugar is dissolved, about 10 minutes. Remove from the heat;
set aside. Season pork chops with salt and pepper. In a skillet, cook pork, onion and garlic in oil until meat is browned. Add water and reserved
sauce. Cover and cook over medium-low heat for 20-25 minutes or until the meat is no longer pink, adding more water if needed. Stir in
pineapple and heat through. Serve over rice

Sticky Chicken

2 large yellow onions chopped
6 cloves of garlic or 3 Tlb. spoons chopped garlic
2 Tbl. spoons of ovlive oil
1 package of 10-15 chicken drumets
1 package of 6-8 chicken wings
salt and pepper to taste
2 Tbl. spoons all purpose seasoning
1 tps. cayenne pepper if desired
1/2 C. Water


In a large boiling pot combine chopped onion, garlic and oil. Add salt pepper and all prupose season. Cook down on medium heat until onions are almost browning. Then sprinkle chicken with seasonings as desired. Put Chicken into pot and stir all together. Turn down heat to med-low. After 15 minutes add water. Now let simmer for two hours, stirring every 10-15 or so, or until chicken is falling off bone and there is a sticky goo in the bottom of the pot. You'll know it's done when you can't wait anymore to eat it.

You can put anything you want with this....stuffing, mashed potatoes or just by itself on game day. Hope you enjoy. We love this one!
